Not really all the bigger gourami like quite a bit of space, and the smaller ones can be quite territorial. My advice would be adding a few more loaches and corys as they're both fish that should be kept in groups of 6+.

Pearls really need a bigger tank, my old males were around 18cm long.

Adding just water from your old aquarium won't do much for cycling, as most the beneficial bacteria lives in the filter and on glass/decor. Best thing to do is as BikBok said and add some of your established filter media to your new tank.

This is a common problem when discus aren't kept in groups, remember in nature they a schooling fish that can be found in groups as large as a 1000 discus. Ideally you should get more discus and get rid of the severums as they are of completely different temperaments.
