I don't eat live fish!

I don't buy whitebait either - too expensive. This bag was given to me this morning and is 1lb which is about 450g I think.

My dad (born and bred on the West Coast of the South Is) uses this recipe...

Beat together 3 eggs and 1tsp salt

Add 1/2 - 3/4C flour and 1tsp baking powder

Mix to a smooth batter with milk.

Add 1lb whitebait.

Don't mix too much and don't mix it again after it has been first mixed.

Cook as patties.

This makes the whitebait go further than Barrie's method :wink:

Barrie, do the whitebait all stick together your way, patty-like, or are they more like short noodles? :-?

they stick together loosely

The idea is to get as much flavor as possible by putting as few "extras" as possible

With whitebait being such a delicate flavor, its important to retain it as close as possible and flour dilutes it as do too much egg

For the first time, you may need to put 1 egg to 250 gms?

Dont cook them too fast or the center of the fritter wont be cooked and keep the fritters small, say 2 desert spoons per fritter

any chance of making this tread not viewable to Stella, we may not be safe when next we see her

I agree with Barrie.

as many 'bait as you can get in a pound

1 egg lightly beaten....not whipped because that is cruelty.

a pinch of salt and pepper and fold 'bait thru

fry on a hot but not Smokin pan with a little butter

I use single dessert spoon size dollups of mix to make small easily cooked morsels

dont drink beer as this will hide flavour, until after eating

tho where I come from all you need to sustain a boy into adult hood is a 'bait sandwhich a beer, a mug of tea and to meat up with the odd cousin or even a normal one...lmao...and not even all at once

Thanks Caryl, now I'll be drooling until Friday when I can get to a shop and buy some. I know it's too expensive but I can't help myself, I'm an addict 8) You're very lucky to get it for free and I'm a little bit envious :lol:

I cook mine as Barrie and Navarre do....nothing but whitebait with egg to hold them together.

Sorry Stella, it's a deliciously delicate flavour that I can't resist :oops:

Just the thought of eating whitebait makes me a little nauseous. I don't think it's good for anything but fish food.
Very expensive fish food :o It's obviously a matter of taste and there's no accounting for that. I think it's one of those love it or loathe it kind of things.

OK, tried both and I think Jim's (and Navarre's) recipe wins.

I split the amount in half and got 18 patties from dad's and 12 using Jim's recipe. This number used to feed a family of 6 (2 adults, 4 kids) but since it is just Grant and I these days - we ate them all ourselves :lol:

Now if you were feeding kids (and Ira) then your fathers recipe would be great but only put one whitebait per fritter

All those poor Native fish.

I used to love whitebait and going whitebaiting. Now I am wiser to their plight and have vowed to never again go whitebaiting.

I did the same with eeling. I love fresh smoked eel, but not any more. To me they are more pleasurable to watch in thier own habitat doing what nature intended them to do.
